The unique blade shape of the Parmoulin knife is modeled after a historical blade form called "Yatagan." The shape is reminiscent of the ancient Turkish sabres which ultimately traveled from the Orient to France, and ended up being used as bayonets for the guns of Napoleon's soldiers. As Napoleon's army advanced into Solingen, the blade shape gained popularity as a utility knife. An elegant knife with a wide blade and exquisite balance, it has also been called a "Solingen Turk." It is easily identified by its slightly curved cutting edge and the strong bow in the back just behind the blade's tip. A parmoulin knife is most often used for Parmesan and other hard cheeses.
